From Hanoi’s first MICHELIN Green Star to two brand-new One MICHELIN Star restaurants shining bright in Ho Chi Minh City, the third edition of The MICHELIN Guide Hanoi | Ho Chi Minh City | Da Nang serves culinary excellence.

While we won’t spill all the delicious details—scroll on for our Inspectors’ insights—expect to find bold new interpretations of hometown flavors, time-honored preservation techniques, and a fast-evolving dining scene shaped by a new generation of chefs. From the rich agricultural bounty of the north to the coastal treasures of the south, Vietnam’s culinary landscape is thriving—and raising the bar with every bite.

With its fast-growing dining scene and a wave of exciting new openings, the Land of the Blue Dragon is quickly becoming a rising star in the world of food and drink.

Vietnam’s diverse geography shapes a rich culinary landscape, from the rice fields of the north to the fisheries of the Mekong Delta and the spice-laden inland mountains. Regional techniques—such as fermentation in the north and drying or salting along the coasts—give Vietnamese cuisine its distinctive character.

This year’s increase in MICHELIN Stars reflects the growing quality of Vietnamese dining, with all newly Starred restaurants led by young local chefs. Sustainability is also in the spotlight, marked by a new Green Star restaurant that operates on a zero-waste model and grows its own ingredients.

Ho Chi Minh City stands out for its range—from beloved local spots to upscale venues led by international names. Hanoi and Da Nang continue to impress with new street food finds and Bib Gourmand additions. Across all three cities, dining remains both accessible and exciting.

The 2025 selection highlights a dynamic, fast-evolving food scene. With more than 20 new entries across all categories, Vietnam’s culinary future looks brighter than ever.
